In Eataly’s 24-hour operating bakery, the Lead Baker is responsible for creating and maintaining a quality production environment. The Lead Baker oversees the production of artisan bread products in a 24-hour baking facility and directs staff in day-to-day bread production. Directly reports to the Bakery Manager and Bakery Assistant Manager.

  • Partners with Bakery Manager and Bakery Assistant Manager to effectively communicate with the department; assists in scheduling and leading staff meetings

  • Assists in giving directions to staff relating to daily operations, including ensuring that all tasks are accomplished and that all policies and procedures are followed (e.g., meal & break policy)

  • Provides outstanding guest service that meets or exceeds expectations daily within Eataly Bakery

  • Responsible for the production of bread in the 24-hour baking facility; prepares breads, rolls, focaccia, and other bread items to be sold in the bakery and to be served in all restaurants

  • Complies with all portion sizes, quality standards, department rules, policies and procedures; ensures food adheres to proper food handling, safety and sanitation standards

  • Exemplifies, and maintains department-wide standards for sanitation, procedures and hospitality

  • Performs other duties as required or assigned


  • Minimum of 2 years’ experience in bakery or bread production

  • High school diploma or equivalent preferred

  • Degree from a post-secondary culinary arts training program is desirable

  • Excellent communication and problem-solving skills

  • Demonstrated ability to understand and implement written and verbal instructions


  • Strong knowledge of sourdough process and fermentation is preferable

  • Ability to exert well-paced mobility for up to 8 hours in length

  • Ability to lift up full pans that may exceed 50 lbs. in weight

  • Ability to work with a wood burning oven, electric pizza convection oven and commercial spiral mixer

  • Cleaning duties such as wiping counters and small equipment, sweeping and refilling stock

  • Must be able to communicate politely and effectively with guests and other employees
