First to Market Hospitality Group is looking for a pastry sous chef to help aid in our bakery department as it grows and expands towards the end of this year.

The bakery is currently responsible for filling pastry case displays at two of our BBCM locations, plus producing desserts for a chain of Chin Chin restaurants with four locations. We are in the process of organizing a commissary to accommodate the growth of our company with two more locations opening by the beach.

 Pastry Sous Chef is responsible for:

- producing and assisting bakers in producing items such as cakes, cookies, mousses, yeast breads, pizza dough, scones, tarts, shells, custards, etc…

- organizing production and bakers to ensure all locations are stocked

- have constant communication with executive pastry chef and other chefs

- implement systems to ensure that the bakery and work areas stay clean with weekly cleaning schedules, etc…

- quality assurance at all locations

- organize daily delivery for the items for all locations

- assist in setting pars for different items throughout the week

- manage bakers’ schedules to minimize overtime

- covering early morning shifts

- ordering product from appropriate vendors

 Requirements

- at least 6 years of pastry production experience

- knowledge of cake decorating, yeast breads, custards, doughs, and short dough

- positive attitude and leadership qualities

- able to start as early as 5 am

- servsafe or California foodhandler card REQUIRED
