Open kitchen concept, cafeteria style service, all orders are processed through 4 stations. The register station takes the customer's order and accepts payment. The carving station produces our hand carved menu items including our signature sandwich, Beef on Weck. The grill station rounds out our menu adding grilled meats for sandwiches and deep fried side dishes. Finally, the table station is responsible for completing the orders by organizing and packaging the items and handing them to the customer. Charlie The Butchers Kitchen is open for lunch and dinner 7 days a week. Counter servers report for work over two shifts per day starting as early as 11:00 am and ending as late as 11:00 pm. Counter servers are responsible for work in the stations mentioned above, daily opening and closing duties, side work and excellent customer service. Counter servers may also cross train into our catering department for food prep and delivery.

Charlie's grandfather (Charlie) started the business as a butcher shop in downtown Buffalo. He also served as the Mayor of the City of Buffalo in the early 1930's (our Buffalo roots run deep). Three generations later, Charlie The Butcher took the meats out of the cold display case, slow roasted them, carves them with the skill of a surgeon (or butcher), and has perfected Buffalo's increasingly famous Beef on Weck Sandwich. Charlie also serves unofficially as Buffalo's Food Ambassador at events like Buffalo Nite in Washington D.C. and at food shows all over the world.
It's hard to define a culture in a few short words. Every business has one, it's our commitment to quality and service that guides it.
