Together with Eaton DC, PDS will instill the values of Omotenashi throughout all food and beverage concepts on property – from the hotel’s standalone restaurant, American Son, and elevated all-day café, Kintsugi, to the lobby-level cocktail bar and the year-round Rooftop Bar.

Plan Do See America is looking for a Prep Manager to manage production of cocktail ingredients and manage the prep team for our cocktail bar and restaurant. This is a great opportunity for those interested in the behind-the-scenes work of craft cocktail production.

  • Oversee batching cocktails, cocktail ingredients and other prep items ensuring that the recipes are being followed and quality standards are being met
  • Oversee staff daily activities and make sure that tasks are being completed in a timely manner
  • Create daily prep list based on previous night’s Manager on Duty notes
  • Create weekly prep schedule in anticipation of needs
  • Assist in invoice management (checking invoices for accuracy, cataloguing invoices and working with accountants to pay invoices in a timely manner)
  • Ensure staff conduct standards are being met
  • Order supplies (working with Beverage Manager to order necessary supplies including food, dry goods and liquor for prep)
  • Oversee receiving and organizing (coordinating employees to take in and organize deliveries)
  • Oversee repair and maintenance (reporting any issues to ensure bar and prep space are functional and meet appearance and cleanliness standards set by the company)
  • Ensure service style and standards are met and guest expectations are exceeded
  • Identify guest needs and respond proactively to all of their concerns
  • Monitors guests and internal feedback and takes corrective action as required ensuring the highest level of guest satisfaction
  • Interview, train, supervise, mentor, develop, and evaluates staff
  • Schedule staff appropriately based on business needs
  • Oversee time management and reporting (ensure clock ins of all prep staff are accurate, make sure work is being completed in the timeframe set forth);
  • Attend weekly meetings (participate in management meetings on a weekly basis to update on current issues, events and to form a unified group in regards to company values)
  • Uphold standards of service and production (creating standards and making sure those standards are met)
  • Produce weekly inventory reports (in conjunction with Beverage Manager, inventory all alcohol, prep and garnish materials)
  • Hold staff accountable for their areas of responsibility and clearly articulate expectations
  • Maintain effective relationship with food & beverage management, staff and all departments within property
  • Assist in managing monthly food, beverage and labor in an effort to minimize expenses and overtime
  • Ensure that paperwork is processed for bookkeeping and payment
  • Report to management regarding sales results and productivity
  • Act as a brand ambassador for all Plan Do See LA properties
  • Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas
  • Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances
  • Performs related duties as required

  • Three (3) years of experience in a similar position
  • Must be able to speak, hear, understand, read, and write the English language
  • Excellent knowledge of wine, spirits, and liquors and their proper service, with the ability to design pairings and cocktails to match food
  • Proficiency in OpenTable or similar reservation system
  • Proficiency in MICROS or similar POS program on a managerial level
  • District of Columbia Food Handler’s Card
  • High school diploma or GED equivelent
  • A general knowledge and understanding of Washington D.C.'s current events, cultural and culinary happenings


  • Excellent communication skills (verbally interacts with management, staff and guests)
  • Solution oriented
  • Must be proficient in Microsoft applications (Excel/Word/Outlook)
  • Must have proven leadership skills and teambuilding skills
  • Must have a aptitude for guest relations
  • Ability to work well in stressful, high-pressure situations in a fast paced environment
